Ingredients

Adjust Servings:
6 cups All Purpose Flour
2 tsp Salt
2 tsp Baking powder
2 tsp Baking Soda
2 Tlbs Cinnamon
1tsp Nutmeg
6 Eggs one at a time
4 cups Zucchini shredded
1 cup Chopped Walnuts Optional

Zucchini Bread

    This is a double batch-you can certainly cut in half.

    Really, really good and moist, my family and friends love this recipe so much that I make double batches.  Bread freezes  well and keeps in refrigerator for weeks.

    In large bowl mix the Oil, Sugar, salt and eggs together

    Add in cinnamon and nutmeg and Zucchini

    In separate bowl combine flour baking powder and baking Soda

    Slowly add flour mixture 1 cup at a time to the wet ingredients. Combine well

    Butter and flour 4- 1lb bread pans
    Preheat oven to 325 degrees. Pour bread mixture into pans to three quarters full. Place in oven on middle rack, bake for 75-80 minutes or until toothpick inserted comes out clean. Let cool for a few minutes then remove bread from pan, place on cooling rack. Slice and enjoy!!!!!
